Last week, that lovely Nutella ad-you know the one that features a dozen children all huddled together to make some yummy pancakes, which they later go on to slather loads of delicious Nutella on, quickly made me realise that I need a vegan alternative for pancake day. Life is crepe enough without pancakes 😉
So, I have been trying out a few alternatives and here is what I have come up with:
Vegan Pancake Recipe
Ingredients:
- 1 1/2 cups of flour
- 2 tbsp sugar
- 2 tbsp baking powder
- 2 tbsp flaxseed
- 1/2 tsp salt
- 1 tbsp oil
- 1 1/4 cups of water
- 1/4 cup of almond milk, soya milk or rice milk-whatever your preference
- Dairy free chocolate chips-optional
Method:
- Sift the flour, sugar, baking powder, flaxseed and salt into a large bowl. Add your faux choc chips if desired. Make a well in the centre of the dry ingredients
- Whisk your water and milk alternative together and pour into the well in the middle of the dry ingredients
- Blend all ingredients together
- Place large spoons of your batter onto a pre-oiled pan on a medium heat and flip when bubbles start to form. Brown on both sides
- Serve how you like them. I’ll be having mine with a vegan Nutella alternative. There is a great recipe in Rosanna Davison’s book Eat Yourself Beautiful and some health shops even stock premade vegan chocolate spread. Or I might serve them with some strawberries and some coconut cream or some Soyatoo whipped cream depending on my mood.
