It’s 9 more days until Halloween! And because the smallies in my house are under the spell of all things spooky, we are making some scary treats every day. We’re trying to use as much fruit as possible, seeing as it’s Harvest season and all 😉
Spiced Apple Cupcakes
Ingredients:
Cake
150g flour
70g demerara sugar
115g unsalted, softened butter
2 large eggs, beaten
2 tsp baking powder
1.5 tblsp ground mixed spices- cinnamon and nutmeg
1 tblsp orange juice
1 large cooking apple-cored and deseeded
Icing
200g butter or margarine at room temperature
160g icing sugar
1 teaspoon vanilla essence
Green food dye (optional)
1) Add flour, sugar, butter, baking powder and eggs to bowl. Mix.
2) Stir in the finely chopped apple pieces and orange juice. Whisk until creamy.
3) Scoop portions into the cupcake tray.
4) Bake for 15-20 minutes.
To ice:
Whisk the icing sugar, butter and vanilla essence together until it’s a creamy consistency. Add 2-3 drops food dye depending on whether you want to or not. Place in piping bag and decorate the cakes when cooled. Decorate with some scary sprinkles or cake decorations. We got ours in the Aldi baking aisle 🙂 They tasted yummy 🙂
Other faves today included Banana and Orange Witches’ Hats and Casper Apples
Basically, we cut a thick-ish slice of orange- which is the rim of the hat, cut the top off a banana,which is the pointy part of the hat. Then you make a hole in the middle of the orange slice, put the banana in and, voila! One ‘hat’.
Our Casper Apples are also easy peasy to make.

Skin, decore and slice and apple. Carve out ghost shapes in the fruit. Use the pips for eyes 🙂
I’ve found that this is a great way to get little ones to eat fruit because of the novelty factor. I’m sure there will be more Halloween inspired treats to be had over the next week . Let us know all your fun Halloween foods 🙂
